slow cooker Paleo turkey chili

Fall and winter are slow cooker seasons. Is there anything cozier than coming home to the smell of a hot meal without having to do any work? (Well, yes, there are cozier things, but you know what I mean).

P.S. My slow cooker is not a CrockPot & I won't be throwing it away, despite what happened in the This Is Us episode...

One of my intentions this year: To make 1 new slow cooker recipe every month. I have about 100 (probably more) saved to my Evernote, but I usually end up creating my own instead of exploring other peoples' genius creations.

But why slow cookers? For me, this makes meal prep 100x easier. You can toss a whole bunch of ingredients into your slow cooker, set it, and either go to bed or go to work and come back to a fully cooked meal that will last you for at least another couple of meals. Whatever you can't finish can go into the freezer — another big win.

This recipe uses turkey, which I think is super underrated (I grew up eating massive amounts of ground turkey, but most people seem to be meh about it), but you can easily substitute for beef. I also am loving the inclusion of bone broth — it has great gut-healing properties (because you know I'm team healthy gut) and gives it an extra rich flavor.

Slow Cooker | Serves 3 | Paleo, gluten free, dairy free

Ingredients

  • 1 lb dark turkey meat, defrosted or fresh (I get mine from Stillman's Farm, a local farm stand in the Boston Public Market)
  • 1 bunch lacinato kale, chopped
  • 2 tbsp tomato paste mixed with ⅓ cup water
  • ½ can chopped tomatoes
  • 8 oz bone broth (I used ½ a bottle of turmeric ginger BruBroth)
  • Salt, pepper, cayenne, garlic powder, chili powder, cumin, paprika (I use Simply Organic seasonings that I order from Vitacost)
  • ½ onion, chopped
  • 2 cups cauliflower/broccoli mix (I get this from Whole Foods)

Directions

  1. In your slow cooker (if it has this setting — I used the Ninja Kitchen 4-in-1 Cooker) or on a pan, brown the turkey until the edges are browned but the inside is still raw.
  2. Place in the slower cooker and add tomatoes, tomato paste + water, bone broth onions, and broccoli/cauliflower mix.
  3. Add all the seasonings.
  4. Cook on high for 4 hours. 2 hours in, add the kale. Stir and cover. (You can also add this in right from the beginning — this type of kale holds up pretty well so it should be OK).
  5. Remove from heat, top with red pepper flakes, more salt if needed, and enjoy! I love it with some sweet potatoes or butternut squash and avocado.
