easy paleo mocha banana bread

Guys, I'm really ready for fall.

It feels like this summer has FLOWN by (I say this about everything, though). It's already August, I have 2 trips booked this month, and Labor Day seems like it's practically here.

Even when it's 90 degrees out, I can taste fall approaching.

Weird, I know.

I made this mocha banana bread in May, but I think it's perfect for the early fall, or when you can stand to turn on the oven (I think there's nothing cozier than blasting the AC and baking during a summer thunderstorm, personally).

I used to make banana bread from scratch, but this Simple Mills mix makes it SO easy. Plus, it's super whole ingredients! I've added some fun things to up the taste, because yass to mocha-flavored everything.

Easy Paleo Mocha Banana Bread

Ingredients

Directions

  1. Heat oven to 375 deg F.
  2. In a mixing bowl, whisk eggs and all wet ingredients.
  3. Slowly add in dry ingredients, and continue whisking until there are no more chunks.
  4. Fold in mix-ins slowly with a spatula.
  5. Pour into a lightly oiled ramekin, loaf pan, or muffin tin and place into the oven.
  6. Bake for 30 minutes uncovered.
  7. Cover with foil and then bake an additional 25-30 minutes, or until a toothpick in the center comes out clean.
  8. Let cool before eating (so hard, I know!). Serve with nut butter (this one's my favorite — use AP20 for 20% off your order!), in a yogurt bowl, or just eat by itself! 

Paleo Berry Collagen Cake

Directions

  1. Grease a ramekin, muffin pan, or cake pan with coconut oil and dust a bit of the cake mix on it.
  2. Preheat oven to 350 F.
  3. Combine all wet ingredients in a bowl and whisk.
  4. Combine all dry ingredients except for berries and cacao nibs in a separate bowl and mix thoroughly.
  5. Combine wet and dry ingredients. Slowly fold in berries and cacao nibs.
  6. Pour into the pan and bake for 45 minutes at 350 F, or until a knife inserted comes out clean.
